If the boiler fires up when the thermostat calls for heat the problem is unlikely to be the thermostat. The problem is probably boiler related especially if you say it sounds different, the best thing to do would be to get a gas safe registered boiler engineer to have a look at it.
It looks like it could be the condensate drain pipe, the debris in it is probably a build up from the original sink waste. The pipe may be no longer in use. Try ringing the plumber and asking him.
