I have moved into a property with a Gledhill SysteMate 2000 and not much clue as to how it operates!

I am also considering installing solar panels at my property and investigating if I can use the generated electricity to heat the water in the thermal store. I have found the myenergi Eddi device and am wondering if this can be installed alongside the SysteMate 2000 to heat the water using the heating element in the tank?

Probably is the answer.

Ask the solar installation companies you get to quote to include this.

BTW heating your hot water from your excess solar is a PERFECT way to increase your return on investment.
