commercial kitchen has an old burner with no FSDs, presently its possible to turn the gas on and walk away without lighting it

needs a new piperun with an interlock,
obviously its advisable but does it also have a low pressure cut off or some sort of pressure proving device

cant recall whats the legal minimum was

one of the chiefs must have lent on the oven control knob while cleaning, filled the oven with gas which subsequently went bang and blow the doors open when she lighted the hob

Yes! Low pressure sensor with interlock to solenoid valve and interlock with ventilation extraction system is what you need. Similar scenario to chemistry labs in educational establishments.

I knew about the extract just couldnt remember if the low pressure sensor was mandatory
